Title: Spam Musubi (Sushi with Sauteed Spam)

2 2/3cWhite rice
5 1/3cWater
1tbMirin (sweet sake); see note
1cnSpam; 12oz
  Soy sauce
  Sugar
4 Eggs; lightly beaten
1/4cSmall green bean strips
1/4cSmall carrot strips
  Furiake (toasted sesame &
  . seaweed powder); see note
  Nori (toasted seaweed
  . sheets); see note

Cook the rice with the water and 1 teaspoon sweet sake, covered, until it is done and will stick together, about 25 minutes. Set aside to cool.

Remove Spam from can and slice into 11 or 12 slices. They will be less than 1/4-inch thick. Place a large skillet over medium heat, add a little soy sauce, a tablespoon of water, a little sugar to taste and a dash of sweet sake. Place as many Spam slices as will comfortably fit and simmer 2 to 3 minutes on each side. Remove from pan; repeat wtih remaining slices. Set aside.

Pour a little water and soy sauce in a medium nonstick skillet set over medium-low heat. Add half the egg batter and cook, turning the eggs once with a spatula, until the thin egg pancake is done. Slide onto a plate and set aside to cool. Repeat with remaining egg. Cut the cooked egg into small pieces or strips. Set aside.

Boil the bean slices and carrot slices until they are barely cooked (a couple of minutes) and still somewhat crisp. Set aside.

To assemble, cut the seaweed strips in half to make 4x8-inch sheets. Scoop about 2 tablespoons of rice onto the center of the seaweed. Moisten your fingers and press and tamp the rice into the shape of a Spam slice. Lay a slice of Spam on top, a few strips of bean and carrot, a sprinkle of furiake, then a few pieces of egg. Press 2 more tablespoons of rice on top. Take 1 side of the seaweed and fold it over the rice. Wet the final edge and fold it over to seal. Repeat until all ingredients are used. Serve with soy sauce, wasabi and sliced pickled ginger.

Makes 11 to 12 sushis.

Note: Mirin, furiake and nori are available at Oriental grocery stores and some health food stores.
